在旅游的六要素“吃、住、行、游、購(gòu)、娛”中，“吃”排在第一位。俗話說：“民以食為天?！笨梢?，景區(qū)餐飲服務(wù)在整個(gè)景區(qū)服務(wù)中占據(jù)重要地位，它是景區(qū)向游客提供優(yōu)質(zhì)服務(wù)的基礎(chǔ)和保障。
1餐飲服務(wù)基本要求
當(dāng)游客進(jìn)入餐館時(shí)他想得到怎樣的食物和服務(wù)? 由國(guó)家旅游基金會(huì)在美國(guó)和P＆G公司進(jìn)行的關(guān)于游客喜愛的調(diào)查指出,游客重復(fù)購(gòu)買某商品的原因位于前5位的是:衛(wèi)生,味道,合理的價(jià)格,便利的地理位置,舒適的環(huán)境和優(yōu)質(zhì)的服務(wù)。
1.1公共衛(wèi)生
就餐者對(duì)就餐環(huán)境的衛(wèi)生要求嚴(yán)格。它體現(xiàn)出游客對(duì)危深感全的需要，而且衛(wèi)生與否直接影響到游客的心情。游客只有在一個(gè)整潔衛(wèi)生的地方就餐才會(huì)感覺到安全和舒服。游客對(duì)就餐環(huán)境的要求體現(xiàn)在以下三個(gè)方面：就餐環(huán)境，餐具和食品。顧客總是喜歡在擁有新鮮衛(wèi)生的食品，嚴(yán)格消毒的餐具這樣的安全，舒服令人愉快的地方享受美食。
1.2 快速的服務(wù)
在用餐時(shí)需要快速服務(wù)是由于以下原因：
 習(xí)慣。由于現(xiàn)代社會(huì)的快節(jié)奏只是人們有很強(qiáng)的時(shí)間概念而且習(xí)慣了固定的生活節(jié)奏。因而，遲緩的服務(wù)速度是顧客感到不習(xí)慣和不舒服。

The Fundamental Requirements of Food and Beverage Service
What does a consumer expect to buy and to be received when he enters a restaurant? According to the tourists preference research, conducted by National Tourism Foundation in America and P&G company, the first 5 reasons why the consumer chooses to buy the goods and repeat the buying are sanitation, taste, reasonable price, convenient location, comfortable environment and quality service respectively.
Sanitation
Diners are critical of the condition of sanitation. It reflects tourists' need for security, and it brings immediate influence to guests' mood. Only in a clean and sanitary place can guests feel safe and comfortable. Their requirements lie in three aspects, they are: dining environment, dining utensils and food. Fresh and sanitary food, strictly sterilized utensils and tidy, tranquil environment are always preferable for guests to enjoy delectable food in a safe, comfortable and pleasant environment.
Quick serving
Quick serving is required when dining due to the following reasons:
•Habit. The fast pace of modern society cultivates people's sense of anxiety of time and develops a fixed fast psychological rhythm. Therefore slow pace makes them feel unaccustomed and uncomfortable.
•Guests have a tight schedule. Many things are awaiting them afterward, so they expect fast serving.
